Smokey Boy Spareribs

total time: 4 hours

What you need:

½ cup -3/4 cup Smokey Boy

2 Racks of Spare ribs

4 oz Barq’s root beer or 4oz apple juice

yellow Mustard, honey mustard or stone ground mustard

BBQ sauce of choice ( we like Sweet baby rays for sweet ribs)

roll of Wide Tinfoil.

Instructions:

Preheat oven to 250

***If you only have regular width tinfoil, lay two sheets on top of each other and fold one of the long edges on itself about a ¼ inch. repeat 2 or 3 times until firm seal is made. Add a 3rd sheet of foil on top of the seam to prevent leaks that may happen and continue with steps as normal***

Lay out tinfoil and Leave them 6-8 inches longer than the ribs.

place ribs in center of foil pat dry with paper towels and peel off silver skin from rib side of meat.

Cover ribs with mustard in order to bind Smokey Boy to meat.

Generously coat ribs with Smokey Boy seasoning and pat into ribs.

Take the tinfoil along the long sides of ribs and bring together on top creating an pouch with open ends.

Fold edges together with small seam and repeat 3 or for more times until a thick seal is formed.

Fold one short end of foil up to ribs by doing one small fold and the end then again until seal is formed.

Take the final open end and slightly tilt upwards and pour Root beer or apple juice into pouch and then seal last end like all other seams to create tightly sealed pack.

Place pack onto a tinfoil lined baking sheet in case there are leaks in pouch and place in oven for 3.5-4 hours.

After 3.5 hours open rib package and use tongs to grab the end of a rib bone and with a slight twist and pull the bone should slide out. (If the bone does not come out easily, put back in oven for 30 more minutes)

Once done, you can eat plain or sauce them. To sauce in oven or on grill is almost the same process.

On grill turn heat to med/hi place ribs and brush or spoon thin layer of sauce on top flip over and sauce bottom. Once the sauce is starting to caramelize but not burning, flip ribs over and sauce the next side, repeat these steps until your desired sauce level and Enjoy!

For the oven: place ribs on fresh lined baking sheet and sauce evenly on top side and place in oven on BROIL for 2-5 minutes. DO NOT LEAVE UNATTENDED and check regularly as ribs may burn if not watched. Once the sauce has caramelized,(2-5 minutes depending on oven) take out flip and repeat sauce/ caramelization process. After bottom side has been sauced, you can repeat the steps as little or as much as you want until desired sauce level and Enjoy!
